ARTICHOKES

Artichoke (Turkish, enginar, Latin, cynara scolymus) is a priced Mediterranean vegetable with edible head and stem. Turkish artichokes are known for their big heads. Enginar contains the chemical cynarine with know benefits to reduce blood ureic acid, cholesterol and sugar. This vegetable has a special place in Turkish cuisine, with some examples provided below.
