ARTICHOKES

Artichoke (Turkish, enginar, Latin, cynara scolymus) is a pricey Mediterranean vegetable with an edible head and stem. Turkish artichokes are known for their large heads. Enginar or artichokes contain the chemical cynarine which have known benefits for the reduction of blood ureic acid, cholesterol and sugar. This vegetable has a special place in Turkish cuisine and some examples are provided below.
